Liver sausages are those in brownish black and they are called ‘Yun Cheong’ (膶腸) in Cantonese. Using quality fresh pork meat mixed with liver and belly with seasoning of Chinese rose wine and soy sauce, the sausages have lasting flavour and nice chewy texture. They are stuffed in natural collagen casings and carefully dried for better taste. Liver sausages are often added into wax meat rice preparation in Chinese restaurants. It is also delicious to be steamed with some julienned ginger and soy sauce for every home cooked meals.
